Shaun is the driving force behind our food, Shaun has a long history of producing outstanding food with Michellin Star and Rossette experience. Shaun's Career started at 16 and within two years was working along side Gary Rhodes at the Castle Hotel in Taunton and the Greenhouse Restaurant Mayfair. The Love affair with food grew and grew. " I remember fondly my times with Gary we would often mews over the available ingredients to the extent that local producers would bring in thier crop and we would inspect it taste it smell it touch it and write menus there and then...."
The Love affair continues and Shaun is a great believer in using local seasonal produce. meat, fish, Wines and Beers.
"If we can buy it locally we will having the ability to "Pop Out" and bring home the bacon and cook it is a massive appeal to me!"
At the Lion we have a variety of enchanting dishes from British Classics to Modern Classics.
